Cajun Spiced Salmon

  • 1 lime juiced
  • chilli powder
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp ground coriander

  1. Preheat oven to 425.
  2. Line tinfoil with butter, add salmon skin side down.  Pour lime juice over top of salmon and then sprinkle seasoning overtop evenly.
  3. Fold up tinfoil around salmon and put it in oven for 20 minutes.  Should flake easily when done.

White Vegetarian Pizza

1 cup broccoli florets
2 teaspoons olive oil
1 cup chopped red bell pepper
1/4 cup chopped red onion
2 garlic cloves, minced
4 large mushrooms, sliced
1/4 teaspoon crushed red pepper
Mozzarella cheese, shredded
Asiago cheese, shredded
Olive oil cooking spray
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano

  1. Preheat oven to 450°.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add bell pepper and next 3 ingredients; sauté 5 minutes or until tender. Add broccoli, salt, and crushed red pepper; cook 2 minutes or until thoroughly heated. Remove from heat; drain.
  3. Lightly coat crust with cooking spray; place on a baking sheet. Sprinkle 3/4 cup cheese over crust; top with vegetable mixture and remaining 3/4 cup cheese. Reduce oven temperature to 425°; bake 8 minutes or until crust is golden and cheese melts. Sprinkle with basil. Cut into 8 slices.

Blackened Chicken

  1.  Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
  2. Mix together the paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
  3. BBQ chicken until it’s done.  

Chipotle Salmon with Lime

  • 1 lb salmon
  • 1-2 T olive oil
  • 2 limes, halved
  • 1 tsp chipotle powder
  • 1 tsp salt
  • ½ tsp pepper

Preheat oven to 500°

Cut the salmon into 4 equal-sized filets

Pat each piece of salmon dry to remove as much moisture as possible and place on a metal baking pan such as a cookie sheet

Rub each fillet with olive oil and sprinkle with salt and pepper

Add juice from one-half lime onto each fillet

Season fillets with salt and chipotle and top each fillet with half of a lime

Reduce temperature to 275°

Cook salmon for 8-12 minutes or to your preferred fish temperature.
